Panama City Beach - Leftover Turkey Recipe

Our favorite leftover turkey recipe is my Mom's Turkey Enchiladas. Enjoy!!

Turkey Enchiladas

2- 4 oz cans green chilis
1- large clove garlic, minced
2 T plus 1/3 cup salad or olive oil
1 ½ pounds fresh ripe tomatoes or 1 large can 16 or 12 ounces
2 cups chopped onions
2 teaspoons salt
½ teaspoon oregano
3 cups shredded or diced turkey
2 cups sour cream
½ pound shredded cheddar cheese
½ pound shredded jack cheese
12 corn tortillas

Rinse seeds from chili peppers and chop. Saute with garlic and 2 tablespoons oil. Peel and chop tomatoes. Add with onion, 1 tsp salt, oregano and ½ cup water to chili mixture. Simmer slowly uncovered until thick – about 30 minutes. Combine turkey with sour cream, half the cheese and remaining salt. Heat oil. Dip tortillas in hot oil just until limp. Blot with paper towels. Fill with turkey mixture. Roll and arrange in shallow pan, seams down. Pour sauce over top. Sprinkle with other half of cheese. Bake at 350 degrees for 20 minutes.

Panama City Beach - Thanks and Giving Time

Here is a Panama City Beach giving opportunity...Bay County firefighters are hosting a holiday food drive in an effort to help those in need this season. According to a news release, food donations can be dropped off at any county fire station from 7 a.m. to 9 p.m. through Monday, Dec. 22.
The food items will then be delivered to the Panama City Rescue Mission Food Bank. Only canned and non-perishable food items can be accepted. Bay County Fire Stations are located at:

Join us at Pier Park on November 28th for this special day and the beginning of a Pier Park tradition. Mayor Gale Oberst will light the 20ft Christmas tree located in Town Center (across from Old Navy) at 6pm. There will be Christmas carolers from local schools and churches to perform carols before and after the lighting. There will also be community leaders, Chamber ambassadors, and Leadership Bay members present to help us kick off this holiday celebration. . . and of course an appearance from Old St. Nick himself!

Panama City Beach - Airport News Nobember 23, 2008

The Airport Authority has set a Dec. 19 deadline for what Chairman Joe Tannehill calls "the last piece of the puzzle" for the new international airport under construction at West Bay.

The hope is to add a 5,000-foot crosswind runway that will handle smaller aircraft and make traffic less congested on the 10,000-foot concrete runway under construction. Airport Authority members want to move forward so the smaller runway can be completed by the May 2010 airport opening date. The shorter asphalt runway will be used by smaller commercial aircraft and corporate jets and add a crucial safety factor to the new airport that pilots of larger international flights. Completion of the crosswind runway is not necessary for the new $318 million airport to open in May 2010. The smaller asphalt runway should cost about $18 million, far less than the larger $98 million concrete runway that will handle heavier aircraft and last up to 40 years. Current estimates are that the Airport Authority should have the money for the additional runway.

The airport currently is $17 million under budget, and there is about $17 million in untapped contingency funds. Another reason for the Dec. 19 deadline is that Phoenix Construction Services, which is building the larger runway, is about 55 percent completed on their part of the work. The company will be moving portions of its equipment from the site within 60 days. If the crosswind runway decision is delayed and Phoenix is forced to move equipment back to the site, the runway's expense could increase.

It is great to see the construction moving along. May 2010 will be here before we know it. The airport will be very convenient for the folks wanting to fly to Panama City Beach and stay in our Panama City Beach Condo. The airport is only 10 miles from Celadon Beach Resort…Jerry
